Cheese making is as much an art as it is a science, and there is no better mentor with whom to explore the craft than Jimmy Warren of Fruition Farms. Jimmy and co-owner Chef Alex Seidel (Chef/Owner of Fruition Restaurant) hand-make an amazing portfolio of sheep’s milk cheeses, and now you get to join in the fun, set amidst the verdant Larkspur pastures where their ewes graze.
Learn the artisanal cheese making techniques used by Fruition Farms, Colorado’s first sheep dairy and creamery. As an apprentice cheese maker, you will be creating a beautiful ricotta, the first cheese Jimmy and Alex made on the farm and first-place finisher at the 2011 American Cheese Society Conference. This is a hands-on experience, and you’ll get to take your 1-pound ricotta cheese home for show and tell (followed closely by eat and tell). Important Stuff!

Important Info:
  • Dress comfortably: Wear comfortable clothes and shoes. You will be on your feet for about 4 hours.
  • Nosh notes: As this experience goes over the lunch hour, please bring something nice to snack on. You may also want to bring a bottle of water.
  • NC-17: This class is ideal for people of old enough to have a voter registration card. Due to the length and skill level of this class, ages 18 and up are welcome.
  • Buy local: You are going to have very few opportunities in your life to buy cheese any fresher than this. Take this opportunity to buy direct from the farmer and support local farming.
  • Getting There: Take I-25 South to Plum Creek Pkwy (Third Castle Rock Exit. Go East on Plum Creek for roughly one mile to first stop sign (Lake Gulch Road). Go right on Lake Gulch and go eight miles to Hwy 83 (Parker Road). Go right at Hwy 83. Travel five miles and go left on Gillian (just past a school house). Go east on Gillian to stop sign (Cherry Creek Road). Take a right on CC Road and travel roughly five miles. Farm is located on the west side of East Cherry Creek Road. We have a green house, metal barn and red barn.

Passionate Promoters of Local Artisan Food (and Owners of Fruition Farm)

In November of 2009, Jimmy and Alex ventured out to New York’s Hudson Valley to attend the Dairy Sheep Association of North America’s annual symposium. Heedless of the fact that they had zero experience in raising sheep or making cheese, they returned to our fair state with the desire to create Colorado’s first Artisanal Sheep Dairy and Creamery. Less than a year later, in September 2010, Alex and Jimmy welcomed their flock of 40 milking ewes and one ram, and the adventure began. Cheese making started three days later. On Christmas Eve of 2010, the first lambing season unexpectedly began. Since then, Fruition Farms Dairy & Creamery has grown to include three distinct sheep’s milk cheeses, all of which highlight a different characteristic of the wonderfully rich milk from which they are made. Through all the challenges, failures and the success of receiving their first cheese award, Chef Alex and Jimmy have been fueled to continue on their path of learning and the development of their craft.
